Royal Iced Traditional Christmas Fruit Cake With Holly Wreath

This exquisite handmade fruit cake will be the majestic centrepiece of your Christmas feast and will amaze your friends and loved ones with its style and flavour. Each cake begins with our skilled bakers soaking the vine fruit in French brandy for 24 hours. This allows the flavour of the brandy to permeate through the fruit and to make them nice and juicy. We then carefully mix all the ingredients together, and so not to crush the fruit, we stir the mixture by hand rather than with an electric mixer. The deliciously scented cake mixture is poured into a specially prepared cake tin and baked low and slow, which fills our bakery with the wondrous smells of Christmas baking. Once cool, we "feed" the cake with more French brandy and wrap it in foil and store for a couple of weeks. We then open it up again and feed the cake with even more brandy. All this "feeding" ensures a moist and boozy cake and the long storage allows the cake to mature in flavour and darken in colour. A week before we deliver the cake to you, our bakers brush the cake with warmed apricot jam and expertly cover the cake with marzipan. The jam sticks the marzipan to the cake and both serve to seal in the moisture of the cake. After a couple of days the marzipan has fully dried and is ready for our handmade royal icing. Royal icing is made from egg whites and icing sugar whipped up for around 10 minutes then expertly applied to cake to give a whimsical winter snow scene. A day or so later the icing will have dried and a ribbon with hand-crafted bow is wrapped around the cake.
You can choose to leave the cake decorated with our simple and elegant bow or, for a more traditional style, you can choose to add a wreath of handmade fondant holly leaves and berries. Each cake is also presented on a silver foil cake board as shown in the images.
