Avalon Cake

Delicious flavours of apple, almond and cinnamon make this cake very moreish indeed. It tastes like an apple frangipane tart. We soak the currants and sultanas in apple juice and almond oil overnight so they become plump, juicy and packed full of flavour. The cake is spiced with a hint of cinnamon and decorated with flaked almonds. It's a real treat!

Oh and here's a fun fact for you - Avalon means "apple tree".
