The Ultimate Easter Classic: Our Signature Simnel Cake 🐣

There is something incredibly nostalgic about the smell of spices and almond wafting through the bakery during Spring. While chocolate eggs usually steal the spotlight, the true crown jewel of the season is, without a doubt, the Simnel Cake.

At Togri Bakery, we take this heritage recipe seriously. Our Simnel cake isn’t just a fruit cake, it’s a labour of love, and each slice brings a piece of history to your tea table.

What Makes Ours Special?

If you haven't tried a traditional Simnel cake before, you are in for a treat. We start with a rich, moist fruit cake packed with vine fruits and citrus zest. But the real magic happens in the oven: we bake a hidden layer of marzipan right into the centre, which melts into the sponge for a texture that is unbelievably moist, flavoursome and sweet.

The Golden Touch

We finish every cake with a thick crown of premium golden marzipan, and of course, it wouldn't be a Simnel cake without the iconic decoration! We top ours with 11 hand-rolled marzipan balls, traditionally representing the faithful apostles. We do actually make 12 balls, but we eat Judas as a baker's perk. It’s a beautiful, symbolic centerpiece that tastes even better than it looks.

Baker’s Tip: It pairs beautifully with a cup of Earl Grey.
