Yorkshire Parkin


This deliciously moist and sticky gingerbread traybake originates from Yorkshire and is traditionally eaten around Bonfire Night.  What makes this ginger cake special is the addition of oats into the mix giving the cake a lovely texture and a bit more interest compared with a normal ginger cake.  We have added our own twist to recipe and included fresh crushed ginger for extra warmth, which you might need on a cold night watching fireworks.  So, when you gather around that festive bonfire, or watch fireworks from the warmth of your home, or just want a comforting and warming cake for those chilly winter evenings then this cake will be perfect for you.
